This method is much appreciated for the balance and the sweetness it provides to the cup. This process is way more complex than both natural and washed ones, since coffee with its silverskin is dried out with all, or most of all mucilage, being this a very sticky substance. Coffee beans tend therefore to stick to each other quite often, thus increasing the risk of mould development, if a continuous and appropriate ventilation is not ensured. This is achieved by drying the beans on raised beds.
